In Germany, many regions have their very own beer specialty. Probably the best-known regional beer is the Kölsch, which is popular in Cologne. The people of Cologne are extremely proud of their beer style and celebrate the enjoyment of it with special glasses and entire pubs dedicated to Kölsch. There is even a special name for the waiter who serves the Kölsch to his customers. The so-called Köbes wears a blue apron and is said to have a direct, almost rude manner. But you forgive the Köbes for that, after all he keeps an overview even in the densest crowd and will be on his way to you with a fresh beer when the last sip is still in the glass. The Gaffel brewery also employs some of the legendary Köbesse to bring their fine Kölsch to the public.
The Gaffel private brewery goes back to a brewery at Eigelstein 41 in Cologne. Beer has almost always been brewed here, and this was first documented in 1302. In the long street there were a few breweries and inns that were ready to quench the thirst of Cologne residents after a long day at work with delicious beer. The busy brewing activity on the Eigelstein was consistently maintained over the course of the following centuries and has always been a popular meeting place for the people of Cologne. A little more than 600 years after the first documentary mention, the Becker brothers bought the brewery and from then on brewed under the name Gaffel. The top-fermented "In der Gaffel" brewery was a place where you could drink wonderful beer and enjoy hearty home cooking from the in-house kitchen. The efforts of the Becker brothers gave the brewery a whole new shine and made Gaffel Cologne's largest home brewery for top-fermented beers almost 20 years after it was officially founded. Since then, things have been steadily improving and the Gaffel Kölsch brewery has established itself as a constant for excellent beer in Cologne.
In addition to the production of her beer, Gaffel feels a great responsibility towards her environment, which she meets with discipline. The management of the brewery has developed a comprehensive concept for the responsible and careful use of resources and has made the topic of sustainability part of its daily bread. The family business relies on the latest technology: The brewing system is one of the most innovative and modern in Europe and is designed for environmentally friendly work. By constantly reducing water and energy consumption, the brewery is continuously reducing its ecological footprint. The use of a combined heat and power plant and the brewery's own photovoltaic system supports this effect. The sustainable concept of the brewery also includes company cars with electric drive, training courses on the subject of energy saving, recycling and raw materials from the region.
