Typically, breweries collaborate with other breweries or brewers. There are exceptions, where beers are created in collaboration with bars, chefs, sommeliers or winemakers, but usually beer professionals work together with other beer professionals.

The Dutch brewery Oedipus is setting completely new standards in terms of beer cooperation with its latest collaboration partner: instead of sitting down at a table with other brewers, the team brought researchers from the world’s first museum for microorganisms on board. Micropia is a place where everything revolves around the life of microscopic creatures and presents them in a surprising variety. This extraordinary pairing came about because beer harbors a large number of active microorganisms.

Together with the experts from Micropia, the brewers took a walk through the Amsterdam Royal Zoo ARTIS and found what they were looking for in the orchard: wild yeasts are romping about on the leaves, fruits and bark and the team has chosen lactic acid bacteria and a yeast culture called Pichia. This unique combination of handpicked yeasts gives the beer an elegant acidity that brings juicy notes of apricot and peach. The result was married to a pale ale to give it a harmonious bitterness.

The world is full of wonders and with the Wild Microbe Ale from Oedipus you can experience one of them up close!
