In their Rainbow Keeper Collection, the brewers of the Spanish brewery Espiga let off steam with a very special raw material: yeast is a largely underestimated ingredient in the world of craft beer. Funky hops and specialty malts are getting a lot more attention and are the elements that get craft brewers excited. The yeast is just as elementary and taste-forming part of the beer as the green gold or grain. Special yeast already existed hundreds of years ago and today they are being rediscovered by bold and adventurous brewers.

The Norwegian farmhouse yeast Kveik is one of the yeasts with a special character and taste. This strain has the ability to ferment at temperatures as low as around 40 degrees Celsius, giving the beer a fine acidity and dry citrus notes in the process. Thanks to these properties, Kveik is the perfect complement for a fruity IPA.

Highlanders is a Kveik India Pale Ale brewed with Amarillo, Citra, Mosaic and Simcoe hops and then dry hopped. A generous portion of oatmeal and three types of malt make the IPA a creamy beer specialty with a velvety soft mouthfeel. In terms of taste, the creation scores with tangy citrus fruit and strong notes of sun-ripened peaches. Espigas Kveik IPA is a refreshing summer treat with a special twist.
